Peach & Apple Nectar
Summer is coming, and this one is a classic!
These are what I call nectars, or fruit pulp drinks. So refreshing & great for the kids!
Any stone fruit can be used for this recipe. Pineapple also works great. Stir in some yoghurt at the end to make a lassi, or a touch of vodka or Malibu for a delicious cocktail…
Makes 1 Litre
4 Peaches
4 Apples
2 Star Anise
1 Cinnamon Stick
2 Cardamon Pods
2 Tbsp Brown Sugar
500ml Apple Juice
2 Tbsp Fresh Lime Juice
Peel & core the apples & cut into chunks with the peaches.
Combine the star anise, cinnamon stick, cardamom, brown sugar & apple juice. Pour over apple & peach & leave to macerate for 24 hours.
Place in a shallow baking tray & bake at 180, basting regularly. Remove & puree everything. Pass through a sieve.
Finish with the lime juice to taste.
Serve in a frozen shot glass or water glass.
